Chocolate Chia Pudding

I love chia seeds!! They have fiber, protein, and low carb. I have a major sweet tooth and since I’m on a grain free and sugar free diet I need to find ways to curb my sweet tooth. Chia seed pudding is a great way to do that. This pudding is versatile to eat for breakfast or snacks. This recipe is for breakfast because it uses coffee, but you can substitute the coffee for whatever you would like to create your pudding. I have made a couple of changes to the recipe myself. I did try it with the coffee and it was really good, but I am a true peanut butter lover at heart!! I love it!! So I made a few changes to the recipe. Change 1 I used chocolate almond milk to replace the coffee and for change 2 I replaced the nut butters with PB2. For those of you who don’t know what PB2 is, it’s powdered peanut butter. You can also mix and match and customize this for whatever you are in the mood for. Adding different flavorings or different kinds of fruit is a good way to do that. I will be most definitely playing with this recipe 🙂

  • ½ cup chocolate almond milk
  • ½ cup full fat canned coconut milk
  • 2 heaping tablespoons of PB2
  • 1 teaspoon vanilla extract
  • 2 tablespoons honey
  • 1 tablespoon unsweetened cocoa powder
  • ¼ cup chia seeds
  1. Blend brewed chocolate almond milk, coconut milk, PB2, vanilla extract, honey, and cocoa powder in a blender.
  2. Place the blended mixture into a resealable large jar (or 2 smaller jars) then add chia seeds. Seal jar and shake. (I used 2 smaller jars and placed 1/8c of chia seeds in each jar)
  3. Place in refrigerator overnight or for at least 3+ hours.
  4. Eat up. Breakfast is served.




Lifestyle Change

Hey everyone! We are now in 2014 and I have decided this year to be healthier by creating a major lifestyle change! I decided to go grain free and sugar free, which to all that know me, know it is a HUGE DEAL!!!! I love sweets and bread, oh heck who am I kidding…..I LOVE FOOD in general, but I need and want to be healthier along with wanting to get off all medications.
I gave it major thought, and I was going to try the paleo diet that a lot of people are on right now. I can’t do this diet because it gets crazy expensive and I don’t have that kind of money right now, plus it’s strict. You have to stay away from all grains, beans, legumes, dairy, and sugars. Basically anything high in starch. This for me is not doable because come on lets be honest, like I said I love food, and giving up beans and dairy is where I draw the line, if I already have to give up grains and sugar!!! Lol I decided that grain free is more doable for me. I still eat beans and cheese (which I love) and have more options. I cut out all grains and use almond flour, coconut flour, and sunflower seeds as substitutes for flour. I cut out sugar except natural sugars from fruits, honey, and maple syrup. I use swerve as a sugar substitute. I eat a lot of seeds like chia, pumpkin, etc, and all nuts.
It’s going to be hard and I know this, and I’m going to have highs and lows, but this is a roller coaster I’m going to have to ride. This section will have recipes that I’m using along with progress up dates to help get through this healthier lifestyle change. So for week one I am proud to announce that I did great and lost 6 lbs 🙂 Hope you guys try out some of the recipes!
